Bourbon Tasting

On the eve of American Thanksgiving we are holding a bourbon tasting on Wednesday November 23 to salute of some of our neighbours better attributes. The line-up includes Buffalo Trace, Basil Hayden 8yr., Corner Creek 8 yr., Rowan's Creek 12 yr., and four single barrel whiskies: Elmer T. Lee, Eagle Rare, Blanton's Gold Edition, and Evan Williams 1990.

The tasting will commence at 7 p.m. Tickets are available in advance for $30 (all taxes and charges included) online.

Our 17th Annual Festival Of Small Breweries on Friday September 30, 2005 put the spotlight on Ontario Craft Breweries. There were thirty-nine brews showcased from thirty different brewers. As usual, many attendees were more intent on the social aspects of the event and only 979 samples were rated out of the 2160 served.

  • Mill St. Tankhouse Ale finished at the head of the pack with a median score of 42 out of 50. Black Oak Chocolate Cherry Stout, Mill St. Coffee Porter, and Denison's Weissbier all received scores of forty or more and qualify for honourable mentions.
  • As usual, although none were universally accepted, just about all of the brews found fans. Sixteen beers finished above the very respectable average score of 37.5.
  • The Most Curious award for the most tasted beer goes to Black Oak Chocolate Cherry Stout. The Scotch Irish dry-hopped cask Sargent Major was a distant second in interest. With its über-agressive bittering, some thought the Sgt. Major was "off" but many more tasters loved the "hop tea" character and it finished fifth with a score of 39.

C'est What's Craft Beer Manifesto

C'est What will only serve beer that meets these criteria:

  1. Single batch brewing. The contents of each brew kettle are used for one brand only.
  2. All natural ingredients. The ingredients used should be easily recognized as “natural” and, if processed, must retain their essential character.
  3. Fresh. Beer tastes best fresh. Pasteurized beer will not be served at C’est What.
  4. Our draught list is Canadian made only.

radioBeer List Update

Since we opened in 1988 it has been our mandate to showcase "True Local Flavour." With the formation of the association of Ontario Craft Brewers (OCB) we have made the commitment to offer our customers at least one brand from each member brewery as long as the brew meets the standards set out in our Craft Beer Manifesto.

Our beer list has been growing over the past month, check out the latest in draught and bottles.

The Hot Five Jazzmakers - all six of them - are now in their seventeenth year of Saturday afternoon residency at C'est What. Their style derives from the pre depression era encompassing classic and revivalist jazz, spirituals, blues, and ragtime. Covering artists from Louis Armstrong to Jelly Roll Morton.

A good natured delivery, frequent guest appearances by touring traditional jazz and blues musicians have helped develop a solid regular following that makes each performance a social event. In New Orleans they were awarded the Freedom of the City. They have toured North Germany twice, and have been featured at France's prestigious Marciac Jazz Festival. They have also represented Canada at the Edinburgh International Jazz Festival in Scotland.

Their recordings include six CD's, the most recent of which is entitled A Little Bit of New Orleans with New Orleans-born guest star Gregg Stafford on trumpet.

The Hot Five Jazzmakers continue their weekly Saturday matinée through to December 18. Show time 3:00, Admission $5.
