17th Annual Fall Festival Of Small Breweries
Friday September 30, 5:00 to 10:00 p.m.
Seventeen years ago, when C'est What launched the Festival Of Small Breweries, there were only a few small brewers in Ontario to provide us with truly handcrafted products that challenged the mainstream. We are now pleased to say that we have the choice of over thirty breweries to serve our thirsty and discerning customers. Last year we were able to serve the equivalent of well over 250,000 bottles of craft brewed beer.
In celebration of this revolution in quality and consumer choice, we are teaming up with the newly formed Ontario Craft Brewers and their twenty-five members to showcase their fine brews at our upcoming Festival on Friday September 30. We have been hard at work getting interesting brews from the far corners of Ontario as well as those closer to home. In all, we'll have thirty-five craft brews available on tap to sample.
Admission is free, samples are a loonie each. Please join us and "Taste. The difference."

What Is A Craft Beer?
In our August 2005 issue we asked the question:
What are the qualities that define a "craft brewed" beer?
Not surprisingly, responses from our readers and customers focused on the quality of the brew. Here are the highlights:
- passion and dedication of brewers
- small batches
- best, quality, natural ingredients and process
- no additives, preservatives
- fresh product
- creativity
These comments fit in quite nicely with our thoughts on the subject. We are about to embark on the next step in the evolution of our beer list. Starting in October Cest What will serve only craft brewed beer (both in bottles and on draught). After some thought and discussion with fellow beer lovers we have come up with the following:
C'est What's Craft Beer Manifesto
- Single batch brewing. The contents of each brew kettle are used for one brand only. Wort Streams that are adjusted to produce multiple brands are not considered to be Craft Brewed.
- All natural ingredients. The basic ingredients for beer are water, malted grain, hops, and yeast. Other ingredients may be added to enhance the flavour of the beer. The ingredients used should be easily recognized as natural and, if processed, must retain their essential character.
- Ingredient list. A Craft Beer worthy of the designation will disclose their ingredient list in quantitative order (eg. water, malted barley, hops, yeast). For bottled beer it is preferred that the ingredients be listed on the packaging. In any case, an ingredient list must be submitted to Cest What to be considered for our beer list.
- Fresh. Beer tastes best fresh. Pasteurized beer will not be served at Cest What. Brewers are encouraged to add the bottling or kegging dates to the packaging.
- Our draught list is Canadian made only. We consider Canadian to be made in Canada in a Canadian controlled brewery.
Front Street Face-lift
Construction has started on Front Street East and is scheduled to continue through until the beginning of November. Although the streets will look a little chaotic, C'est What will be open and accessible during the construction period.
After this is all over we will have a sidewalk wide enough, in front of C'est What, to open a modest patio next warm season. Meanwhile,if you brave the construction site any weekday afternoon you can redeem a copy of this e-mail to buy lunch for a friend.

The Hot Five Jazzmakers
The Hot Five Jazzmakers - all six of them - are now in their seventeenth year of Saturday afternoon residency at C'est What. Their style derives from the pre depression era encompassing classic and revivalist jazz, spirituals, blues, and ragtime. Covering artists from Louis Armstrong to Jelly Roll Morton.
A good natured delivery, frequent guest appearances by touring traditional jazz and blues musicians have helped develop a solid regular following that makes each performance a social event. In New Orleans they were awarded the Freedom of the City. They have toured North Germany twice, and have been featured at France's prestigious Marciac Jazz Festival. They have also represented Canada at the Edinburgh International Jazz Festival in Scotland.
Their recordings include six CD's, the most recent of which is entitled A Little Bit of New Orleans with New Orleans-born guest star Gregg Stafford on trumpet.
The Hot Five Jazzmakers kick off their weekly Saturday matinée on September 24. Show time 3:00, Admission $5.
Songwriter Central
Songwriter Central is a new monthly series at Toronto's premier intimate singer showcase venue. A 'songwriter in the round' concert series that provides an excellent opportunity for up and coming songwriters to experience the "songwriter circle" format, try out new material, and share the stage with established songwriters. Featuring three songwriters and one special surprise guest each month.
Songwriter Central with Andrea England & Friends next appearance at C'est What's Next is on Tuesday September 27. Show time 9:30, Admission $6.
