Our annual tribute to Scottish good taste on Wednesday January 25, 2006 delved into the question: What's In The Wood? From traditional sherry casks to Port, Burgundy, and American bourbon casks, single malts spend a lot more time aging in a barrel than in the still or in your glass.

The tasters that assembled at C'est What that evening seemed impressed with the difference that the right aging vessel can make. There was a clear preference for wine casks, Port in particular. The otherwise highly regarded with the Glenmorangie Port Wood Finish coming out on top. The Macallan brand suffered the lowest score for their combination sherry and bourbon casked whisky.
